Sweet tooth? This is a very easy and quick recipe for mini blueberry cheesecakes! Best of all it is healthy, low fat, low sugar and less than 100 calories! Could easily eat a few of these and not feel guilty.
Ingredients (makes approximately 11 mini cheesecakes)
- 250g Philadelphia light cream cheese (room temperature)
- 110g Yoghurt of choice (Greek Yoghurt is higher in protein)
- 1 scoop Vanilla Protein Powder of choice
- Oatmeal Biscuits, crumbed (I used Sugarfree Maria Biscuits from Aldi)
- 1 egg
- ¼ cup of sweetener (preferably Natural)
- 1 teaspoon vanilla extra
- 3 tablespoons of blueberry jam
- 1 cup of blueberries
Each serve: 5g protein, 4g fat, 8g carbohydrates
Instructions

Ready to bake! |
- Preheat the oven to approximately 170°C
- Mix the cream cheese, yoghurt, protein powder, jam, egg, vanilla extract and sweetener in a large mixing bowl until combined well
- Spray silicon moulds lightly with oil
- Sprinkle crushed biscuits into each mould for the cheesecake base
- scoop the mixture evenly into each of the moulds covering the biscuits
- Top each cheesecake with a handful of blueberries
- Bake in the oven for approximately 10-12 minutes until firm
- Refrigerate for an hour
- Remove from moulds and devour!

Here's another one for the South Westies! XS Expresso is a cool new chill café located in Wetherill Park (located quite close to Grano) and even better they offer all day breakfast menu AND they have a Belgium dessert bar that is open till 10pm everyday!
They are located at Greenway Plaza, a small outdoor shopping district, next to Anytime Fitness (perfect for that post work out meal =P). The small café is nicely decorated and somewhat stands out compared to its surrounds. Plants line the back brick wall and the roof giving off that hipster vibe. The establishment offers both indoor and outdoor seating as well as takeaway coffee window.
We only stopped by to try the scrumptious scrolls (by
Oregano Bakery) they had on display. We had the Nutella Scroll and Vanilla Scroll but they also offered cinnamon and cookies 'n' cream. The scrolls were served on a wooden board, topped with icing sugar and drizzled with chocolate.
These babies were as indulgent as they look. We had the choice of having them served room temperature or warm; you have to have them warm!
Since it is not too far from home I will definitely want to return for their all day breakfast and lunch offerings and even at night to see their Belgium dessert bar come alive. Below is their menu as on May 2015.
